Wooden barrels (barriques) have a porous structure and a very strong tendency to uncontrolled contamination, especially if the barrels are not filled immediately after a wet basic cleaning. In the long term, sulfurization shall be reduced or even avoided altogether in order to offer quality products with low sulphite contents. Innovative winemakers in Sardinia already show that even sulphite-free wines are possible.
